Want to let you know just how delicious the pig that you sent me was. Absolutely incredible.
I brined it for two days, rubbed a marinade on it for a third day, and then roasted it on the fourth, New Year’s Eve. My wife and I hosted my family for dinner that night, and I didn’t tell anyone (besides my wife) what I was making. When I revealed the roasted-and-rested pig, my family went berserk. The look on my mom’s face was priceless — shock and awe. We devoured as much as we could.
My only issue with it? I should have watched a youtube video on how exactly to carve it. I kinda hacked off portions here and there. Regardless, it was incredible.
